If you are hiking the A.T. this spring don’t forget to look for wild edibles along the Trail. They make a great addition to your noodles and rice dishes. Morel mushrooms, fiddleheads and wild leeks (e.g. ramps) are all found along the A.T. from the south to New England. Here in NH & VT we have been picking and eating them for a few weeks now.
Look for morels and ramps in the woods along the Trail, while fiddleheads (e.g. Ostrich Ferns) typically grow near streams. Make sure you know which ones to pick however, as not all ferns are edible and there are “false morels” which are not recommended for consumption.
